Chocolate “Peanut Butter” Pie

I hope everyone had a fantastic Thanksgiving!

I made this pie for my family to enjoy. Everyone loved it!

I will be making it again.

I did make it with a store bought crust, from whole foods.

Mostly because I have never really made my own healthy crust before.

To tell you the truth the crust was boring to me and I just ate the filling, so next time I will be making my own!

You will need to make this the night before you need it, because the gelatin needs time to set.

The top tastes just like a chocolate pudding.

I topped it with homemade coconut whipped cream, I will post this recipe later…. I promise!

Chocolate “peanut butter” Pie


1 pie crust

“peanut butter” filling

  • 2/3 cup nut butter of choice
  • 1/3 cup powdered sugar of choice
  • 2 T tapioca starch

Chocolate cream

  • 1 ½ cups of thick coconut milk
  • 1 T Gelatin dissolved in ¼ boiling water
  • 1/4 cup unsweetened cocoa powder
  • 2 T coconut oil
  • 1/3 cup powdered sugar of choice
  • 1 ½ T vanilla
  • 10 drops of vanilla stevia (or add more sweetener and vanilla extract)
  • 1/4 tsp salt


  1. Prepare crust, and bake if appropriate

  2. Prepare “peanut butter” filling by first mixing together sugar and starch then adding nut butter, once pie crust is cooled, spread on bottom of crust, and place in refrigerator until the chocolate cream is ready, so the filling firms up a bit
  3. Dissolve the gelatin in boiling water
  4. Heat coconut milk and coconut oil either on the stovetop or microwave, until hot but not boiling
  5. Pour in the gelatin mixture and whisk until completely combined

  6. Whisk in the remaining ingredients, and allow to cool for a few minutes until pouring the mixture into the pie crust

  7. If you want to combine all ingredients in a food processor or blender after the milk and oil are heated, that works too.

  8. Allow the pie to cool in the fridge overnight.
